Hello friends! It has been a day since I’ve posted a new recipe here and it feels good to be back! In this current season of life, my cooking goals have shifted from exploring new recipes to making it my life’s mission to get our family of four to sit down for dinner as often as we can. I’m constantly asking, what would my 14 – 16 year old self want for dinner?
But seriously, where did the time go???? This picture was taken just 2 years ago!

Now I’m officially the shortest in the family…

We’re used to being busy, but there is an added element these days. Now, I’m not only competing against school and sports schedules for family time. Oh no, there’s a new competition in town.
Friends.
I knew this day would come because I remember being their age, and the only thing I wanted to do was be with my friends. And now our boys are the same way. The friend group is strong, and that is a good thing, but it definitely reduces the time we have as a family. Now my cooking goals have changed because I need them to want to eat at home.
So when I came across a new recipe for flank steak, it seemed to check all the boxes for my family.
Steak – check.
Cheese – check.
Balsamic Vinegar – check.
That last one is a struggle for me. I don’t love the taste of balsamic but the rest of my family would drink it out of the bottle (gross), which means I’m taking one for the team.
The dish is called Caprese Style Flank Steak, and wow. So good. It has all the flavors of Caprese Salad spooned over perfectly seasoned flank steak. Yummy…..

And the balsamic isn’t overpowering, it just enhances all the flavors of the dish. I would absolutely make this for guests but it’s quick and easy, so also perfect for a weeknight meal.

Caprese Style Flank Steak
Ingredients:
Instructions:
In a small bowl, whisk together olive oil, minced garlic, Italian seasoning, salt, and pepper. Rub generously all over the steak. Let it sit for 30 minutes at room temp.
Heat a grill pan or cast-iron skillet over high heat until smoking. Sear the steak for 4-5 minutes per side until a beautiful char forms and it reaches your desired doneness (medium-rare is perfect here!). Remove and let it rest for 10 minutes.
In the same hot pan, toss in the cherry tomatoes and let them blister and char for 5-7 minutes until they start to pop. Remove the pan off the heat, and let sit for a few minutes while you cut the steak. Slice the rested steak thinly against the grain. Add the cheese to the tomatoes and give it a stir.
Scatter the hot, blistered tomatoes and fresh mozzarella pearls over the warm steak (we served it right on the cutting board).
Top with fresh basil leaves, a generous drizzle of balsamic glaze, and a final splash of good quality extra virgin olive oil.
Serve immediately.

I served with it with roasted potatoes and green beans. Both times I made this dish, everyone cleaned their plates. Definitely keeping this one in our rotation.
