    Jen In The Kitchen: Easy Appetizer Idea!

    I love fresh tomatoes in the summer months and since I am a terrible gardener, I rely on those I can get from the farmer’s market or roadside farm stand. We were traveling to go out of town last weekend, and we came across a little farm stand that had the best variety of tomatoes. I picked up 3 different kinds and put together an easy appetizer I’m calling Fresh Tomatoes With Burrata and Basil. It’s easy and so delicious!

    INGREDIENTS:

    • 2 Beefsteak Tomatoes
    • 2 Heirloom Tomatoes
    • 1/2 Pint of Cherry Tomatoes
    • 2 Cloves Garlic, chopped
    • ¼ Cup Fresh Basil, chopped
    • Olive Oil
    • Burrata Cheese, room temperature
    • Shelled Pistachios, roughly chopped
    • Crushed Red Paper Flakes, optional
    • Salt & Pepper, to taste

    DIRECTIONS:

    Quarter the cherry tomatoes and combine in a small bowl with the chopped garlic and half of the chopped basil. Drizzle with olive oil and season with S&P. Set aside.

    To make the basil oil, combine ¼ cup of olive oil & the remainder of chopped basil in a small bowl. Season with S&P and crushed red pepper flakes if using. Set it aside.

    Slice the beefsteak and heirloom tomatoes (I sliced them fairly thick) and arrange on a platter. Scatter the cherry tomato mixture on top of the tomato slices. Pat dry the room temperature burrata. With your fingers, tear off pieces and place on the tomatoes. Take the basil oil and drizzle all over the tomatoes and cheese.

    Give it a good crack of fresh black pepper and sprinkle with the chopped pistachios.

    The pistachios were an afterthought for me, but I will definitely include these when I make this next.
